Yuca Tostones:
▪︎ Cook yuca in water and salt
▪︎ Smash the yuca between plastic wrap.
▪︎ Lift it with spatula and put in glass pan.
▪︎Bake on high until it gets golden color.
Arroz con gandules:
▪︎ Dry sauté onions and peppers, add garlic, cilantro and some kalamata olives
▪︎ Add water (3 C).
▪︎ Add brown rice ( 1).
▪︎ Add gandules (1/2 C).
▪︎ Add salt and herbs.
▪︎ Bring to boil and cover.
▪︎ Let simmer for about 40 minutes
.▪︎ Add more fresh cilantro.
Yuca en escabèche:
▪︎ Cook the yuca in water and salt until well done ( no white parts ).
▪︎Sauté ( dry) onion and peppers, Add garlic and olives, cilantro and lime juice.
▪︎Mix with yuca
Amarillos:
▪︎ Peel and cut ripe plantain
▪︎ in a skillet add plantain and water▪︎ Cover and cook until all the liquid is absorbed and starts to get a caramel color but it's not burned.
